How I figured out Pistachio gelato

    Classic custard base with raw ground pistachios.

    Pleasant but pale and a bit muted. Texture iced up after a day in the freezer. Nutty flavour was buried.

    Ingredients

    • 500mlwhole milk
    • 100mlheavy cream
    • 150gsugar
    • 4egg yolks
    • 150gshelled pistachios, ground

    Method

    1. Steep ground pistachios in warm milk and cream. 2. Make a custard with yolks and sugar, chill. 3. Churn in an ice cream maker, freeze.

    Toasted the nuts before grinding into a paste, added dextrose to fight iciness, and rested the base overnight.

    Much more pistachio-forward and creamier. Still a bit chalky on the tongue — needs to be passed through a sieve.

    Ingredients

    • 500mlwhole milk
    • 150mlheavy cream
    • 130gsugar
    • 30gdextrose
    • 3egg yolks
    • 180gBronte pistachios
    • 1pinchsalt

    Method

    1. Dry-toast the pistachios at 150°C for 6 min until fragrant but still bright green. Cool, then grind into a smooth paste with 50 g of the sugar. 2. Warm milk and cream, whisk yolks with remaining sugar, dextrose and salt, temper and cook to 82°C. 3. Whisk the pistachio paste into the hot custard, blend smooth, chill overnight. 4. Churn and harden 4 h.

    Added milk powder for body, increased pistachios to 200 g, blended + sieved the base, and aged it for 12 hours.

    Silky, intensely green, scoops cleanly straight from the freezer. The texture finally matches a good gelateria.

    Ingredients

    • 500mlwhole milk
    • 150mlheavy cream
    • 110gsugar
    • 30gdextrose
    • 15gskim milk powder
    • 3egg yolks
    • 200gBronte pistachios
    • 1pinchfine salt

    Method

    1. Toast the pistachios at 150°C for 6 minutes until they smell sweet but stay bright green. Cool fully. 2. Blitz with 60 g of the sugar in a food processor for 4–5 min, scraping often, until you have a glossy, almost-runny paste. 3. Warm milk, cream and milk powder. Whisk yolks with remaining sugar, dextrose and salt. Temper, then cook the custard to 82°C, stirring constantly. 4. Off heat, whisk in the pistachio paste, then blend with an immersion blender for 30 seconds and pass through a fine sieve. 5. Chill at least 12 hours — this is non-negotiable for texture. 6. Churn until the base mounds on the paddle, scrape into a chilled tub, press parchment to the surface, freeze 4+ hours.
