How I figured out Brown butter chocolate chip cookies

    First pass — straight Toll House ratio with melted (not browned) butter.

    Pleasant but flat in flavour. Edges crisp, centres a bit cakey from too much flour. Definitely lacking the deep caramel note I'm chasing.

    Ingredients

    • 225gunsalted butter
    • 200glight brown sugar
    • 100ggranulated sugar
    • 2large eggs
    • 320gall-purpose flour
    • 1tspbaking soda
    • 1tspfine sea salt
    • 250gdark chocolate chips

    Method

    1. Melt butter in a saucepan over medium heat until just liquid, no browning yet. 2. Whisk sugars and eggs together, add the warm butter, then fold in flour, soda, salt and chips. 3. Scoop 12 cookies onto a tray and bake at 375°F for 11 minutes.

    Switched to browned butter, swapped half the chocolate for chopped bar, moved to bread flour, and added an overnight rest.

    Huge step up. Caramel and toffee come through, chewy middle, crisp edge. Slightly too salty — back off to 1 tsp next time. Could use bigger flat puddles of chocolate.

    • 225gunsalted butter, browned
    • 220gdark brown sugar
    • 80ggranulated sugar
    • 1large egg + 1 yolk
    • 2tspvanilla extract
    • 300gbread flour
    • 3/4tspbaking soda
    • 1.25tspfine sea salt
    • 250gdark chocolate, chopped

    Method

    1. Brown the butter until the milk solids are deep amber and the pan smells nutty, ~7 min. Pour into a bowl with the 25 g of "lost" water added back, and cool 10 min. 2. Whisk in both sugars hard for a full minute, then the egg, yolk and vanilla. 3. Fold in bread flour, soda and salt until just combined. Stir in chopped chocolate. 4. Scoop into 80 g balls, fridge overnight. 5. Bake at 375°F for 12 min on parchment, rapping the tray once at minute 9.

    Pulled salt back to 1 tsp, swapped chips for hand-chopped shards, extended fridge rest to 36h, and added the pan-rap trick for ripples.

    This is the one. Deep toffee, ripply edges, gooey middle, big shiny puddles of chocolate. Friends asked for the recipe.

    Ingredients

    • 225gunsalted butter, browned
    • 220gdark brown sugar
    • 80ggranulated sugar
    • 1large egg + 1 yolk
    • 2tspvanilla extract
    • 300gbread flour
    • 3/4tspbaking soda
    • 1tspfine sea salt
    • 200g70% dark chocolate, chopped into shards
    • flaky salt, to finish

    Method

    1. Brown 225 g butter in a light pan over medium heat until the foam subsides and the solids are deep amber, ~6–8 min. Scrape every brown speck into a bowl, add 25 g cold water back to replace what evaporated, and cool until just warm. 2. Whisk in both sugars vigorously for 60 seconds until glossy, then the egg, yolk and vanilla. 3. Sift bread flour, soda and 1 tsp salt over the top and fold with a spatula until no streaks remain. Stir in the chocolate shards. 4. Scoop 12 × 80 g balls onto a tray, cover, and rest in the fridge for 36 hours. 5. Bake at 375°F (190°C) on parchment for 11–12 min, rapping the tray once at minute 9 to deflate them into ripples. 6. Sprinkle with flaky salt while still hot and rest 10 min on the tray before moving.
